Study of the sensory properties of biscuits prepared by adding sesame flour and oil

Abstract
The research aims to identify the importance and benefits of sesame and sesame oil, educate the community about the benefits of sesame and sesame oil, and whether sesame and sesame oil play a role in treating bone pain and arthritis. Does sesame oil play a role in maintaining dental health? Would society accept biscuits made from sesame and sesame oil? The research procedures were as follows: Two samples of biscuits were manufactured. Sample A was made using wheat flour, while sample B used sesame flour. The sensory evaluation of sample A in terms of color was 86.6%, taste 88.4%, fragility 85.7%, aroma 91.9%, and overall acceptance 93.7%. While the sensory evaluation of sample B in terms of color was 96.4%, taste 94.6%, fragility 94.6%, aroma 96.4%, and overall acceptance 98.2%. An electronic questionnaire was conducted to determine the community’s awareness of the benefits of sesame seeds and sesame oil. It was found that 73.5% of people who include sesame seeds in their diet are compared to 26.5% who do not include sesame seeds in their diet. It was found that 74% of people know about the types of sesame seeds, while 12.5% do not know about the types of sesame. It was found that 64.5% of people know about the therapeutic benefits of sesame seeds, while 35.5% do not know. 18.5% of the participants had tried the sesame oil pulling technique, 9.5% sometimes tried it, while 72% had never tried the sesame oil pulling technique. 80.5% of the participants were found to be able to eat sesame flour and sesame oil biscuits, while 17% of the participants might eat them, while 2.5% did not eat them. The study therefore recommended eating 3 tablespoons (15g) of sesame seeds on an empty stomach and including sesame seeds in the diet as a good source of dietary fiber, which helps maintain digestive health and prevent chronic diseases such as heart disease and diabetes. We recommend adding sesame oil because it has a high nutritional value and suitable functional properties for food additives. We recommend replacing wheat flour with sesame flour, as sesame flour contains iron and calcium. Calcium is an essential element for bones and teeth. We recommend trying the sesame oil pulling technique.
